I see that after installation the ssl/email var is set automatically as ssl@domainname.
Is there any way to set this to something else when installing UCS the first time? (I know I can change it afterward via ucr for instance).

The UCRV ssl/email is set in the postinst part of the package univention-ssl, which happens quite early in the installation process. It might be worth a try to set this between the base installation (GTK, Debian installer) and the configuration part of the installation (choosing the server role, domain name etc in the browser view. I didn’t try it myself, but maybe you want to test it and follow the description here, but then set ssl/email instead of windows/domain:
