Is it possible to use rspamd instead of SA after Kopano installation?
Could I freely replace it via apt package manager and setting it (rspamd) up as I need to?

Kopano is using the default mail stack of Univention as a dependency, so you can refer to the official Univention documentation when making changes to it (like disabling Amavis/SA). I would recommend not removing it from the system (but instead disabling it), since this would very likely break dependencies and will lead to the removal of the Kopano apps.
