Is it possible, and when how to do it, to install a docker container (i.e. https://listmonk.app/docs/installation/) that doesn’t exist in the App-Center?

docker-compose and Docker are installed as normal packages and can be used without restrictions. However you cannot use the Univention app-related tooling with your own containers and you have to configure Apache manually as a reverse proxy if needed.
