I suppose it’s no problem to link existing Office 365 users with the Univention app to UCS users. Is this true?
You can create an Office login for each UCS user.

The goal should be that the users can then log in with their UCS credentials.

Are there any restrictions for this scenario?

It is possible and has been done. There is however no automatic way to do it.
